Erica’s Vege Kebabs

Yeah Yeah – I know the men will not appreciate this recipe – but a really good option to a salad with a bbq!

Thank you Erica – i enjoyed these at you home and now make them regularly.

You need:

2 courgettes

1 punnet button mushrooms (white or brown)

2 red onion

2 peppers (red, yellow or orange

Salt and freshly ground pepper

Balsamic vinnegar

Wooden skewers – soaked in water to stop them burning. Can be long or medium sized.


Cut courgette into 1cm slices. if mushrooms are big, halve or quarter them. Cut onions into 1/8ths. Cut peppers into postage stamp (now arn’t they almost a thing of the past?) sized pieces.


Take a skewer and using it like a needle put on a piece of courgette, followed by mushroom, onion and last pepper. Repeat if it is a long skewer.  But don’t sweat it, order and quantity really does not matter. Use all the vegetables. When done, sprinkle with balsamic vinnegar, season with salt and freshly ground pepper.


on a gentle heat, turning once or twice till cooked.
