Even though not on the boat (which is usually where I cook) I made this last night. You will need:
- 1 small onion coarsely chopped
- 2 cloves garlic – chopped
- 2 ripe tomatoes cut into 1cm cubes
- 5-6 asparagus cut into 1 cm lengths
- 1 large fat brown onion cut into 1cm cubes
- Haloumi cut into 1 cm cubes
- Avocado oil
- Ground smoked paprika to taste (about 1/2 teaspoon)
- Salt (not a lot as the haloumi is salty) & pepper (yep – a good grind)
Spray a baking dish with avocado oil add all ingredients and stir well. Bake in a hot oven stirring occaisionally. When done should be a reasonably dry mixture and the cheese should be golden brown.
I used the asparagus because it is in season and mushroom because I had it – but other vegetables could be substituted (e.g. courgettes, broccoli, cauliflower, potato, etc.)
