Pasta with Red peppers & Choritzo

From memory (because it is in a Delicious magazine and Ross has 100’s of them and if I start reading them i won’t do anything else today!

De-seed and cut 4 red peppers into strips. Slice 2 choritzo sausages into discs. Cut up some chillies (bell worked well). Put red pepper, chillie and choritzo into a roasting dish with 1/4 cup olive oil and roast in a hot oven for about 25 minutes. Pepper should be soft and choritzo dark. Boil pasta (large format), drain and add to peppers. Add: lots of grated parmesan, squeeze of lemon juice, zest of about 3 lemons, and lots of torn basil leaves. And some fat black olives if you have them. Toss well and serve.

    I would recommend roasting the olives with the peppers.
