Creamy Pepper Steak & Pasta

As requested Greg.

You will need:

  • 1 Onion – finely chopped
  • A little olive oil
  • Mushrooms sliced – white button are better for colour of sauce but any will do (about 300g)
  • Garlic – finely chopped (optional)
  • Steak sliced into 1cm thick strips- rump is good, but any frying steak will do (as much as you like)
  • Green pepper corns (about 2 teaspoons)
  • Flour (1/4 cup)
  • Milk (1 cup)
  • Cream (300ml)
  • Salt to taste
  • Pasta – green ribbon is best

Saute onion in olive oil until transparent add mushrooms (and garlic if used) and saute until mushrooms cooked. Set aside mushroom onion mix. Heat pan until smoking and sear steak in batches adding seared batches to mushroom/onion mix. Crush pepper corns (mortor & pestle if you have one, or with spoon on board) – can be quite chunky). Mix flour and milk until smooth. (Or you could use blender to mix flour & milk and add pepper corns for last 30 seconds). Put on pot of water, salt, bring to boil. Add pasta and cook for 5-7 minutes for fresh pasta. Put Onion, mushroom and steak mix into pan and heat until sizzling add milk mix, stirring while adding. Add cream continuing to stir. Sauce should thicken slightly. Heat until sauce bubbles to cook flour completely. Take off heat, taste and add salt to your preference. Drain pasta and serve with creamy pepper steak.

    I tried making this for Mark a few weeks ago and did not get it right. Guess I will have to try again. Does Greg eat mushrooms now?
