Panfried fish

We found a wonderful fish shop on a recent trip to Napier. We had this dish in Napier and I bought fish and made for my parents in Taumarunui (‘cept I substituted soda water for beer)


  • Fish fillets – terakihi is good, but any firm while fish will de
  • Flour, Highgrade (about 1/2 cup)
  • Herbs and spices of choice
  • Salt & Pepper
  • Beer
  • Oil for pan frying
  • Lemons cut into 1/8’s with pips removed

Put flour in a bowl and add herbs and spices of choice and salt and pepper. Add beer mixing to get rid of lumps. Add beer until the batter is the consistency of pouring cream. Put fish in batter and cover. Use non-stick pan very lightly oiled ( I use a few sprays of olive oil). Fry fish on both sides. Serve with lemon.

Suggestions for herbs & spices:

  1. Barbecue spice
  2. Tarragon
  3. Lemon pepper (don’t add further pepper)
  4. Mixed herbs
  5. Smoked paprika
