By special request – this is a dish I’ve made for Christmas lunch. Very easy, but spectacular.
Ingredients:
- Salmon – as fresh as possible, filleted skinned and cut into serving size pieces
- Ground cardamon
- Plain unsweetened yoghurt (about 500 ml)
- Manuka honey (2 tablespoons)
- Oil
- Freshly ground pepper & salt
Arrange salmon in a glass dish, sprinkle with cardomon and cover with 1/2 mixture of yoghurt & honey. Turn fish, sprinkle with cardamon and cover with rest of yoghurt/honey mixture. Put in fridge and allow to marinade for 30-60 minutes.Take out of fridge and season with salt & pepper.
Heat barbecue (preferably flat plate, lightly oil and barbecue salmon for a few minutes, turn and barbecue other side. Salmon cooks quickly so be careful not to over cook. Serve.
