Breakfast Fry-up

You need:

Breakfast sausages (2 per person)

Mushrooms sliced (Portabellos work well) (1 per person)

Tomato topped, tailed and cut in half (1 per person)

Bacon (1-2 rashers per person)

Eggs (1-2 per person)


Heat a good non-stick frying pan and add sausages. Cook for a couple of minutes and then add slices mushrooms and cook for a few more minutes. Add tomatoes and bacon and cook till bacon is crisp and everything else is cooked. I usually skin the tomatoes at this stage using tongs to lift skin off. Make some “holes” for eggs and crack eggs and pour into holes. Encourage whites to spread and bind other ingredients (I do this bu gently shaking pan). When egg is almost cooked take off heat and put under a hot grill to finish off. Plate to cut up.

Serve with toast.
