Chocolate Pots

April 27th, 2008 · No Comments

Very strange that the first description that I do is of a dessert – I don’t do desserts. But a chance encounter with a Jamie Oliver TV programme prompted to try this one.

Break up a dark chocolate slab (about 125g) into small pieces. Separate 2 eggs mix yolks and discard whites. Put about 300ml cream in a pot and bring to a simmer. Take off heat and add chocolate and stir to blend add yolks and beat for a few seconds. Mix should be smooth and thick like a custard. Add a good scotch to taste (Jamie used brandy). Beat again. Pour into ramekins and put in fridge to set (at least an hour.
