Sunday 20 April 2008 Opunga Cove & Hamilton

April 20th, 2008 · No Comments

Zinkwazi and I have parted. We collected Tony off the bus at 2:30 and I dropped Rob & Tony off at the tender and drove to Auckland and then on to Hamilton.

Rob played with the alignment this morning and then we motored up to Opua and he was a lot happier. Tony has brought some fancy gadget to check the alignment so I am sure they will sort it. Once I left Rob and tony took Zinkwazi to Opunga cove for the night. I’m still hoping that they will get back by Thursday so we can haul out.

Before I left I organized tea – pickled pork. I had not defrosted it so removed the plastic, put it in my pressure cooker covered with a beer and water added some bay leaves and pepper corns. Brought to boil and then pressure cooked for an hour and a half. Let cool and the made a dry glaze, a mix of cornflour, brown sugar & mustard which I pack onto the meat. Left in oven with instructions for Rob to heat on high heat for 20-30 minutes to glaze. I reserved the cooking liquid with instructions to Rob to cook potato, carrots & broccoli in it. I had Burgerfuel with Greg & Doug in Auckland. Was really good to catch up with them as they had both had trips to South Island so it was good to swap stories.
