About 800g beef mince (good mince – such as Wholly Cow from Hamilton market)
1 onion finely chopped
A little olive oil
1 teaspoon ground cardomon
1 teaspoon dried basil (Or fresh chopped if you have it)
2 tablespoons tomato paste
1 egg
Salt and pepper
1/2 cup flour seasoned with salt and pepper
Olive oil spray
Turn oven onto medium.
Gently fry onion in olive oil until soft. I usually add water to stop onion burning, but cook off water before adding to mince.
Put all ingredients except flour & olive oil into a bowl and mix well. Cover a baking tray with baking paper (saves on washing up) or oil tray.
Form mince mixture into balls (can be large – size of a small apple, small – size of a walnut or very small – size of a malteezer) or sausage shapes. Roll in flour until lightly coated and put on baking tray. Spray lightly with olive oil. Bake for about 45 minutes until cooked through.
