The Great One’s Vegetarian Nachos

Don’t let the “vegetarian” put this off – very delicious. Thx great one.

1 tsp tumeric

1 tsp ground coriander

1 tsp paprika

2 tsp dried chilli flakes

2 tsp crushed chilli (from a bottle)

1 onion, chopped

2 tablespoons olive oil

3 carrots grated

3 courgettes grated

Juice of 1 lemon or lime

1 cup sweetcorn (frozen or tinned)

1 tin red kidney beans in salsa sauce (Watties chilli salsa beans)

Corn chips

2 cups crated cheese (Tasty)

Avocado

Sour cream

Put dry spices into a large non-stick frypan and fry gently for three minutes. Add chopped onion and oil and cook until onions soft. Turn up heat and add courgettes and carrot and cook until carrots are soft (about 10 minutes) stirring regularly. Add lemon juice, corn and can of beans. Turn down heat and fry gently until corn cooked.

Arrange cornchips on a baking tray, sprinkle with half cheese and bake in oven until cheese is melted.

Serve onto plates cover with vegetable mix, sprinkle with more cheese and pop into oven until melted (the great one says the secret is two layers of melted cheese).

Add dollops of sour cream, as much avocado as you can afford and serve.

    I made this last night, it was delicious. We don’t have Watties salsa beans here, so I added 5 tomatoes instead. Worked well.
