Sausage and mushroom bake

Peel 7-8 shallots and 5-6 garlic cloves. Put in a deep baking dish with a couple of teaspoons of olive oil and bake in a hot oven. At same time put in 4-5 potatoes to bake.

After 30 minutes, take onions and garlic out and add a punnet of chopped mushrooms – I used the big brown ones cut into a small dice. Season with salt and pepper. And on top put some breakfast sausages (good quality pork ones preferably from Westmere Butchery). Return to oven After 15 minutes, take out, stir mushrooms and turn sausages. Put back in oven for another 15 minutes. Potatoes and mushroom sausage bake should be ready.

Serve with plain boiled cauliflower (al dente) and Sabato’s blue cheese dressing.
